Liberty Bell Potato Cheddar Soup

  • Discard the oxygen absorber packet immediately after opening.
  • Measure the correct amount of soup mix and water for the number of servings you are making (as shown in chart below).
  • Add the Liberty Bell Potato Cheddar Soup mix to the boiling water, and whisk to combine.
  • Simmer over low heat for 20 minutes, stirring often.
  • Remove from heat and let soup stand for 2-3 minutes to thicken before serving.

We made this soup tonight out of one of the 72 hour packs we got and we really liked it! I thought it was just a tad bland, but some salt and pepper helped (you've got those in your preps, right??). My husband kept saying "mmmmm, this is so good".  If I were making this for a regular meal I would doctor it up a bit with other seasonings, but it really is great as is (and in a situation where you are digging into your preps, this will be gourmet for sure).  Do not hesitate to stock up on this, it will be great comfort food when you need it most. And as some have said, it is very filling- I like that it has a good amount of fat per serving which will be important in an emergency.

I'm even considering purchasing a tub so it can be heated up in a per serving size when craving a warm comforting soup this winter.
